Fermentation is an amazing way of preserving that not only retains the nutrients of the vegetables but becomes alive with probiotics that feed your own personal composting system. Your gut!
In this class you’ll learn how to turn plain cabbage into “aliveness” in just a few minutes. Whether you’re making a quart or a crock full it is all basically the same easy technique. We’ll be focusing on quart size recipes of several different flavors, from plain kraut, mixed-vegetable kraut to kimchee. The vegetable scraps can be made into Kvass, a “live” beverage. This is a hands-on class..
